"Tony Kitous is the man behind Comptoir and the first Comptoir opened in 2008 and has been steadily growing thanks to regular and discerning guests. Comptoir Libanaise serves wholesome and healthy Lebanse food and is extremely popular among the food lovers. The restaurant serves mezze, cold mezze, hot mezze, wraps served with salad and dips, large salads, mana’esh (Lebanese style pizzas), tagine and extras like Vemicilli Rice, Couscous and Batata Harra. For dessert, nothing is more authentic than the sweet taste of baklawa – Lebanese pastries in a variety of flavours such as date filled semolina and walnut filled flaky pastry. I ordered a Halloumi Salad, which has grilled halloumi cheese, baby gem lettuce, tomatoes, baby cucumber, red onions, olives, radish, olive oil and lemon juice. Halloumi is a Cypriot firm, brined, slightly springy white cheese, traditionally made from a mixture of goat and sheep milk, although these days cow’s milk is also used. Its texture is similar to that of mozzarella or thick feta, except that it has a strong, salty flavour imbibed from the brine preserve. Cooking the Halloumi removes all its saltiness and empowers it with a creamy texture. Since the cheese has a high melting point, it can be easily fried or grilled. Its unusualness lies in the preparation of the cheese where no acid or acid-producing bacterium is required. Demand for Halloumi in the United Kingdom had surpassed every other European country, except Cyprus, by 2013. Halloumi is available in almost all popular eateries which I visited in London, Manchester and Liverpool and this salad proves why it is so popular in this country."
