"Let yourself be surprised you won 't regret it! Anyone who describes the canton of Glarus as a culinary no man 's land will be proven wrong by Stefan Schüller or Schülli, as he affectionately calls himself. Schülli in the persona of chef, sommelier and maitre d ' cooks and serves fine dining. Just like with their grandmother, the guests sit down and let themselves be surprised with the gourmet menu. That 's where Schülli is at home and he 's in top form! We started with an “Insalata Caprese”. Anyone who imagines a simple tomato and mozzarella salad will be enchanted visually and on the palate for the first time. A wonderful introduction and our palate immediately adjusted to “sea”. Said and done! This was followed by a Portuguese Gambero on a summery salad of melon, avocado and citrus. Finely seasoned. It continued in classic French style. A poached egg with mashed potatoes and a summer truffle sauce. Then loup de mer on a tomato bed with balsamic vinegar. The fish is fried perfectly crispy on the skin. Who could do without the perfectly grilled entrecote on finely chopped coco beans? Schülli finished off with a pannacotta with raspberry or passion fruit coulis and for those who couldn 't decide with both coulis! Each course is a flavor explosion on the palate. You can confidently rely on sommelier Schülli when choosing your wine. He asks about the taste and brings the right wine.
