"Per quello che riguarda la mia esperienza, metto 4 stelle perché le pietanze servite erano buone, di questo non posso dire nulla ho preso un antipasto tradizione e territorio e il carrello dei bolliti), il locale è carino, accogliente nella sua semplicità. Ma se potessi dividere il giudizio metterei sicuramente 2 stelle al servizio: tra l’antipasto e il piatto principale è passata mezz’ora e posso capire l’attesa in quanto il locale era pieno ma si è sentito un po’ di senso di abbandono generale, nessuno ci ha spiegato in cosa consisteva l’antipasto e anche all’arrivo del carrello dei bolliti è stato servito tutto in fretta e furia senza un minimo di cura ne di spiegazione di cosa stavamo mangiando. Sul finale ho chiesto un amaro e me ne hanno servito uno completamente diverso e quando ho chiesto di poter avere quello richiesto mi hanno guardato come se avessi richiesto chissà cosa. Non ho preso il dolce quindi su quello non posso dire nulla. In generale, per essere la patria del bollito, l’ho comunque trovato nella media e di ristoranti ne giro tanti, per lavoro e per vacanza). "Sabato ora di pranzo. Fame. Sguardo a destra: campi. Sguardo a sinistra: alberi. Sguardo di nuovo a destra: cartello. Semplice, di quelli che si usavano una volta e non si usano quasi più, coltello e forchetta incrociati. Ma sì, per questa volta si può anche seguire. Centro di Farigliano, un paio di persone in giro. Dove sarà La Speranza? Eccola lì, un po' nascosta. Chissà. Si entra e si spalanca un mondo. Tutto arredato con gusto, un delicato profumo di tartufo nell'aria, gentilezza a profusione. Subito sintonia. Il menù è di quelli che parlano prima ancora di vedere i piatti. Scelta degli antipasti: savarin di melanzane e uovo in cocotte. Sì, l'uovo, ma ci va sopra una grattata di tartufo. Obbligatorio. La signora prende la cassettina e chiede di scegliere il tartufo bianco più adatto. Lo pesa: grammi. Perfetto per un uovo. Arrivano gli antipasti. Da applausi. Uovo perfetto, melanzane altrettanto. Si passa oltre. Di primo, tagliatelle al coltello con peperoni dolcissimi. un piacere per il palato. Poi quaglia disossata ripiena di salsiccia, una di quelle cose che si mangiano una volta all'anno e non sempre di questo livello. Scelta di vini straordinaria, del resto siamo a un passo da Dogliani, patria del Dolcetto. Grazie, va bene così. Tutto da ricordare e tanti complimenti allo chef, si vede che sa fare il suo mestiere."

"A really special place, with all the traditional Piemontese meals and more: first to be mentioned is the bollito misto, with the superior meat of the Bue Grasso beef, then all the wonderful antipasti which are served as starters, not to forget the local...kinds of homemade pasta, with any (traditional) seasoning one can think of. A special mention to the Finanziera (a typical stew of offal of beef, chicken and more), really tasty and I personally appreciated it because it's also a bit less saucy than usual. Last but not least, the desserts, very fine and elegant yet really tasty. In the end, the only issue is that really you can't skip any of these wonderful dishes, so you end up eating a lot! But no fear: they also have plenty of really fine wines that will help you get along with all of the meal! The chef is a very nice person, who will come personally at your table, so you can have some talk and exchange opinions in an easy going style (provided that you understand at least some Piemontese). All the service people in general are really handsome and nice too."

"Lovely location and location, the renovation of the interior has been curated. Bad outdoor parking climb very tight and then discover that ey all full and having to reverse in the complete darkness on this very small ramp and without other parking, left in a field (only attention to the customer who chooses this restaurant) the normal section nothing special. The first dishes of my good adventure companions my little tasty and shave. Seconds, excellent cuts of meat cooked quite well, but very cold to be just made... So I have doubts. The club tries to have a high level, but to get to what I think there is still a lot to do. With this I will return because the potentials are good....we hope they read and repent on some points. ."
