Below are the dishes we got to sample Goats cheese crotin, pan fried, to give a crispy outside but smooth and soft in the middle, dressed with basil oil and red pepper chilli jam Foie gras Served with lentils cooked in stock reduction with onions , sweet sultanas , mild morracan flavours Cleverly spiced, without any heat Perfectly delicate Sea bream, pak Choi , spring onions , fish reduction ,sea salt and deep fried lettuce. Duck breast , with deep fried finely sliced sweet potato sticks with sea salt , mash with basil oil , deep fried lettuce , Tamarind with sweet chilli sauce. All these dishes perfectly executed with flair , clever flavour and texture combinations , when food makes you feel emotional , you know it’s good.
