"In recent years spaghetti all’assassina has become a status symbol for Bari restaurants. A badge of honour to be earned, judged by the quality of the assassina they put on the table. Bari’s killer’s spaghetti should be three things. Burnt, crispy and fiery. We had high expectations of Al Sorso Preferito. It is, after all, the restaurant where the dish was born. Served piping hot and wafting a glorious burnt scent, we almost cried as it was brought to table. It was everything we had expected. 11€ for a very generous plate, a 2,50€ cover (included bread and potato chips) and 3€ for a glass of house negroamaro. No homage to Bari’s spaghetti all’assassina would be complete without eating the dish at ‘source’. This should be everyones first stop on Bari’s ‘Assassin’s Trail’."

Excellent spaghetti to the killer, it was the curiosity of this dish that prompted me to have lunch in this restaurant. excellent cuisine, good spice, the peppers were whole, only crispness, no spaghetti was completely burned, the garlic was whole, I would have liked a little less oil, soft goto, abundant dish, I got everything, on the bottom of the plate you see that remains at the end a veil of oil. "Nella giungla urbana del capoluogo pugliese, in quel che ormai è il salotto buono della città, c'è un posto che mixa sapientemente i sapori asiatici con la cultura brasiliana senza peccare mai di superficialità o scontato accostamento degli ingredienti. Anzi è nell'accoglienza ricercata e voluta che troviamo la parola chiave per questo posto. Il primo ottimo impatto di vicinanza lo si ha nella fase post prenotazione, quando squilla il telefono per chiedere conferma della reale presenza degli ospiti. Poi la fidelizzazione si perfeziona al tavolo. Quanto il responsabile di sala si assicura che alcuno dei commensali abbia intolleranze o allergie alimentari, per proporre la migliore scelta in carta senza rinunciare al percorso sensoriale che ti attende dopo la lettura del QrCode. Oltrepassata l'ampia vetrina di ingresso, coloratissime sedute aspettano gli avventori. Il locale ricorda vagamente altre location di ristorazione in prossimità del Kursaal, ma se ci si lascia trasportare dalla fantasia, le gabbie dorate sembrano custodire non semplici super alcolici, ma coloratissimi e vivacissimi parrocchetti o cenerini dell'immensa vegetazione amazzonica li in bella vista e non solo a decoro. Vastissima cantina di vini (in calice o a bottiglia), non toglie il respiro agli innumerevoli drinks sapientemente preparati al momento dal barman. Accostamento sempre perfetto di ogni portata. Cibo che non è solo un simposio del gusto, ma è l'acme per ogni elemento sensoriale perfettamente equilibrato. Qualsiasi scelta, anche la più audace, dovesse carpire l'attenzione del cliente, come il Bao alla carbonara, da gustare con le mani, i ravioli di cinghiale con zenzero e guanciale, il roll gio con la burrata o le tartare di salmone in letto di avocado. Freschissimo il Sashimi special Noh Samba Hagakure e delicatissimo il Tegolino Rice. Tutto oltre le aspettative, ottimo biglietto da visita per esplorare la carta dei dolci che, già nella lettura erano una attrazione di per sé, ma a cui la sazietà non ha dato seguito e senso. Da Rivisitare. Come le spiagge indimenticabili di Rio dopo uno scalo nella romantica Parigi del ventennio."
