"Café Saillan! This is a great place to go for lunch and for fun in the center of Carcassonne. The lunch menu changes daily with specials…leg of lamb, confit de canard, tart of leeks and cheese, roast pork, coq au vin, chicken Basquaise, roast chicken, beef stew, and other local specialties. In addition you have choices of huge and lovely salads. On Saturdays they have guest wine makers and special food prepared by local chefs. You might be treated to exquisite pastries, grilled sausages, escargots Catalan style or oysters on the half shell. There is often music and the place is filled with local people. Café Saillan is one of the oldest cafes in Carcassonne and has kept its tradition and very authentic ambiance. The people and service are warm and welcoming and it’s always fun to come here. The price for the food is a great value for the quality and the quantity. The servings are generous in addition to being always delicious and fresh. Don’t miss out if you want a genuine French experience and great food. I always look forward to returning to Cafe Saillan."

Très bon accueil du patron ambiance conviviale prix raisonnables et plats du jour très bon rapport qualité prix. Apéro tapas du samedi midi qui vaut le détour.

a great place to come on a warm Saturday afternoon. seafood, good beer and wine and a lively crowd on the road enjoy the sunshine. it can be difficult to get an outside table at the top of the lunch break.

This place takes over the street next to Les Halles every Saturday with tables that are prized. It is a great place to get a quick appetizer of whatever is being cooked on the plancha at the moment and a bottle of wine to share with old and new friends.

Endroit chaleureux et convivial ( encore plus le samedi midi )La nourriture y est et de qualités avec des salades de saisons mais aussi des plats du jour variés .Je recommande vivement cet endroit pour le déjeuner en semaine et un apéro convivial le samedi midi

L'équipe est chaleureuse, l'ambiance est celle d'un vrai bistrot de quartier avec des habitués mais aussi des gens de passage; restauration simple vraiment bonne et gouteuse à midi. Et le samedi midi des animations : musique, dégustations... Un endroit vrai et accueillant.

Incontournable le samedi a l'apero THE PLACE TO BE ou il bon vivre TAPAS VINS DE PRODUCTEUR .Tous les branchés de CARCA se retrouve ici ont dirait une grande famille et pourtant les gens de passage se melent facilement a cette foule et les contacts sont trés sympas .La semaine plats du jour excellents differents tous les jours ; pensez a reservez l'interieur n'est pas grand heureusement il y a des tables a l'exterieur .manger bon sans etre pris pour un touriste ça fait du bien.

Il faut se rendre au café Saillan principalement les samedis matins lorsque la terrasse s'ouvre face aux Halles. Vous serez alors un peu en Espagne, un peu en Feria!!! Le charisme et la chaleur du patron vous enchanteront, le rosé, et autres vins sélectionnés chez de petits propriétaires locaux vous emmèneront jusqu'au milieu de l'apres midi. Tout cela avec des assiettes de charcuteries de pays, des tapas mais aussi huîtres et foie gras, et tout cela pour un tout petit budget. A ne pas rater donc.

My wife and I spent a year in Carca and recently returned for a week to catch up with friends.Saillan is a great place, that opens in the morning until early afternoon. Richard, Hans and the team are very welcoming to all. You'd be advised to book a place for lunch but its a great place to wander in for coffee or a drink during the week.On Saturdays, it comes alive with market day. Its busy as locals come for early morning drinks and nibbles. Always a cast of characters, a BBQ or such like and bands occasionally play. Great place and with a great history as well.

"Visited today for lunch after reading a recent review about the high quality of food on offer. We were not disappointed! It was superb. There were 3 choices on each of the courses with one vegan option on each course. I had chicken fricassie which was the most delicious chicken dish I've had for a very long time. The meat was so tender, it fell away from the bone; the mushroom sauce was deliciously tasty - it wasn't over seasoned. My OH had tofu wok which he really enjoyed. Both were served with rice and runner beans. The starter was a dish of 2 types of melon one of which was watermelon, with feta. We didn't think it sounded great but we were very wrong. It was served with a dash of vinaigrette made with a light oil, a tiny bit of honey and toasted flaked almonds and was surprisingly interesting. All the flavours worked so well together. For dessert OH had the cheese plate with 3 different types of cheese which he loved but it couldn't have been better than my raspberry Eaton mess which was particularly good as it wasn't overly sweet. All for €18 each AND it was all organic! We sat outside in the courtyard which was a very pleasant area. The ambiance throughout was of calm. No background music, no clattering noises or shouting from the kitchen area. It was a little oasis of refined lunchtime dining, The service was impeccable. The young man who served us was very impressive and able to tell us what ingredients were used in the vinaigrette. It goes without saying that the high standard of food and service were also reflected in the high levels of cleanliness throughout. We only wish we'd discovered this place sooner and will be back again as soon as I can trust the OH's arm"
