"We have gone with moderate expectations, we expected great quality but what we found surprised us very well. To start with some amouse bouche where the goat cheese with rosemary chocolate is the main protagonist, a flavor and a sensation that does not leave you indifferent. Followed by the homemade cured meats. Enrique was kindly in charge of preparing, cutting and serving at the table. To highlight a great doe sausage and an exquisite duck ham. The wild boar chorizo and the field pâté of great quality but slightly below the first two. Of the starters, to highlight the oyster with mustard seeds in a magnificent dashi. A trip to Japan in one bite. The trout tartare, magnificent, is somewhat eclipsed by the sisho and the wild wheat panna cotta in which the eel, despite being in its minimal expression, for my taste, dominates the dish a bit. The main ones are the star of this menu: Enrique Pérez's saelices salt. A hake with a wonderful point in a pilpil of its spines. A very sweet rice with oreja soflada so creamy that it leaves sensations reminiscent of how good ham sticks to the palate. Very correct lamb rillette, for my taste a little overdone with spices, but no less bright for that. And to top it off, a loin of venison covered in a creamy sauce. You don't need a knife because of how tender it is. As a drawback, I would change the sweet potato for some French fries, but these are personal quirks : The desserts do not lower the level, especially the basil yogurt and passion fruit. It is just the point that is needed at this point. The proposed pairing, we took the smaller of the two, is very good, very well explained. With good national and international wines and some wonderful jewels like that outstanding Riesling. The level of the room, very high, attentive to all the details, great service. Without a doubt, do not wait to come through Sigüenza to come to Doncel, come to Doncel to come to Sigüenza. increíble menú de degustación, no puedo decir lo que me trajo más, sabores de siempre pero con un toque moderno y sorprendente, sin duda un lugar para repetir. ¡Y si la comida era brutal, el servicio era inmejorable! es apreciado no sólo el bien de hacer en la cocina, sino el maravilloso profesionalismo de los camareros. un lugar para volver mil veces.

¡Fantástico! Anoche cenamos allí, una de las personas era vegetariana y nos sorprendió y deleitamos con su menú degustación de tierra y sal. fabuloso tratamiento del producto , los sabores, texturas , presentación, platos .de la primera mordida a la última . una impecable sala de servicio. gracias por hacernos disfrutar tanto y por adaptar el menú a la persona vegetariana. Sólo quieres hacer excusas.

I wanted to make a reservation for lunch the next day. My Spanish is not that good yet (sorry). I was asked by 2 members of staff if I had seen the menu. I had seen outside and also the prices! No problem! Yet this was pointed out to me twice with a clear indication of the price! That seems very derogatory and I don't like being treated that way. Especially if you are definitely not a poor slob! This is the reason why I decided not to make a reservation. View menu

The full menu with international wine pairings is a wonderful taste experience. The incredible dishes (between tradition and avant-garde) of the chef are perfectly combined with the original and successful proposals of the sommelier. One detail that I would like to highlight: although the cheese board proposal was not on the menu, it was offered to us and we enjoyed it without being included in the bill at the end. All a detail. I 100% recommend this fantastic dining experience.

excelente comida y servicio. Sólo para revisar que coincidimos con un gran grupo de comensales que causaron que la atmósfera fuera ruidosa en algún momento, pero no desagradable. el chef salió a pedir disculpas muy amables. combinación de sabores tradicionales con algo más nuevo con muy buen equilibrio. Tal vez es un poco de salsa en los platos de carne cuya cocina es perfecta, esta es tal vez mi opinión ya que entiendo que si un producto es bueno, no debería ocultarse con otros menos naturales. decoración sobria pero agradable. sin duda un restaurante que se puede repetir.
