"Weekend as a couple. We stayed one night and had dinner at their Bistro. The hotel and restaurant are unique in the area. You can see the Relais Chateaux quality seal and the Michelin star. Small elegant rural hotel with a very quiet atmosphere, ideal for couples without children in a typical landscape of the fields of Castilla. The service and friendliness of the staff is impeccable and the cleaning and maintenance of the place is done with great care. The pool is large and has plenty of garden space. Everything is taken care of in detail. Local and proximity product that is presented with care both at dinner and at breakfast. The only downer I found was the soundproofing of the room (number 5) from its next door neighbours. Luckily the hotel environment in general is very calm and the guest profile too and did not cause any disturbance. My congratulations to the management and all the staff. The area is very lucky to have your hotel and restaurant, we will be back soon. Rooms: 4 Service: 5 Location: 5"

The hotel was smaller than excepted, but it has a nearby country gravel road to take walks/runs. They also have nearby rio dulce hike which is wonderful. Service was great and they were kind to welcome us with a gift. Even though the train passes close by, you almost never hear it, specially at night (never runs at night). Maybe they can have better WiFi, and better toiletries (conditioner/shampoo/ etc). Will go back when they open back next year. View menu

A wonderful place to escape and disconnect from the routine. The human team is exceptional and they made us feel at home. The quality of the food, both breakfast and dinner, is unbeatable. Hello, once again we have been very comfortable in our stay at the Mill. However, the room in which we have stayed, as a superior double, does not meet expectations. I suggest a couple of possible improvements. Improvements in bathroom and improvement in soundproofing with respect to the floor above. As there is no children's pool, it has limited our use and we have not been able to enjoy that relaxing corner as we would have liked! The cuisine is very rich, quality at a high price, both cooking and drinking. The standing of the rooms is good, although with deficiencies, it could be better valued if it were not for the fact that it belongs to Relais Châteaux, which conditions the low evaluation Rooms: Tile floor in hotel room which makes it less cosy. We went to celebrate our anniversary and were looking for something unique and relaxing, I booked the spa, in the evening at the Bistro restaurant and at the Gastro restaurant. It has been a wonderful experience in general, delicious treatment, attentive to us at every moment. "We have gone with moderate expectations, we expected great quality but what we found surprised us very well. To start with some amouse bouche where the goat cheese with rosemary chocolate is the main protagonist, a flavor and a sensation that does not leave you indifferent. Followed by the homemade cured meats. Enrique was kindly in charge of preparing, cutting and serving at the table. To highlight a great doe sausage and an exquisite duck ham. The wild boar chorizo and the field pâté of great quality but slightly below the first two. Of the starters, to highlight the oyster with mustard seeds in a magnificent dashi. A trip to Japan in one bite. The trout tartare, magnificent, is somewhat eclipsed by the sisho and the wild wheat panna cotta in which the eel, despite being in its minimal expression, for my taste, dominates the dish a bit. The main ones are the star of this menu: Enrique Pérez's saelices salt. A hake with a wonderful point in a pilpil of its spines. A very sweet rice with oreja soflada so creamy that it leaves sensations reminiscent of how good ham sticks to the palate. Very correct lamb rillette, for my taste a little overdone with spices, but no less bright for that. And to top it off, a loin of venison covered in a creamy sauce. You don't need a knife because of how tender it is. As a drawback, I would change the sweet potato for some French fries, but these are personal quirks : The desserts do not lower the level, especially the basil yogurt and passion fruit. It is just the point that is needed at this point. The proposed pairing, we took the smaller of the two, is very good, very well explained. With good national and international wines and some wonderful jewels like that outstanding Riesling. The level of the room, very high, attentive to all the details, great service. Without a doubt, do not wait to come through Sigüenza to come to Doncel, come to Doncel to come to Sigüenza. Good luck to the whole team, I hope the second star arrives soon because it will be well deserved."

"Es el último restaurante que hay en la Calle Mayor, justo antes de la explanada del castillo/parador de Sigüenza, arriba del todo por tanto. Nos recomendaron ir aquí el primer día que llegamos a esta bella ciudad manchega en Semana Santa del 2012, aduciendo que daban comida típica seguntina a un precio y cantidades razonables. Es un restaurante ubicado en una antigua casona de piedra, con arquitectura muy típica de la zona y en concreto, de la Calle Mayor. Adornos del mundo de la agricultura y lámparas características de este tipo de casas jalonan las gruesas paredes de piedra, dándole un toque rustico que se confirma con los manteles rojos y blancos tan tradicionales en otras épocas. Con la carta y menús en la calle para interés de los turistas que por allí se acercan a interesarse, según entras, tiene una especie de recibidor donde te reciben, con una barra a mano derecha. Se entra al comedor principal hacia la izquierda, y tras pasar este comedor, se sale, tras bajar un par de escaleritas, a una zona de terraza cubierta, también con mesas, que da hacia la Ronda del Castillo, con bastante árbol enfrente. A mano derecha, de la entrada a la terraza, un pequeño pasillo con otras escaleras nos lleva a otro rincón y comedor de la casa, muy acogedor, más luminoso y con más luz natural que el comedor principal. Eso sí, al cocina está en este zona, con lo que lo que prometía ser un sitio tranquilo, no lo fue tanto con las frenéticas idas y venidas de los camareros. Con carta normal bastante extensa, hay distintos tipos de menús, todos bastante típicos ofreciendo productos característicos de la región, y donde los asados como el cordero, el cabrito o el cochinillo, se llevan la palma. Hay menús que van desde los veintipoco sin IVA hasta los cuarentaypico o cincuenta euros creo recordar. El de veintipoco permitía elegir un entrante y un segundo, con agua o vino de la casa, del año y muy corriente, sin postre, y no tiene migas entre las elecciones de primeros platos, una pena : , aunque sí cochinillo :D. Muy rica la sopa de marisco, sabrosa y con bastante condimento, y muy corriente el revuelto de ajetes y setas, ningún misterio. De segundo, nos aventuramos con un salmón, del que sacan una cantidad exorbitante, muy jugoso, aunque bastante especiado, puede repetir bastante. En mi caso, opté por pedir cochinillo, buena pinta inicial, con la piel bien doradita, pero el trozo que me tocó no tenía demasiada carne, era una zona del cochinillo con mucho huesito pequeño, y por mucho que lo intenté, no le pude sacar demasiado partido, una pena. Tardaron bastante en servir el segundo plato, y también con el postre, una tarta de queso casera y con membrillo por encima que estaba muy rica. De la comida me esperaba bastante más tras las recomendaciones, pero no me pareció nada del otro mundo, quizás condicionado por el plato de revuelto y cochinillo, con poca carne, que me tocó. Eso sí, hablo en todo momento del menú económico, no puedo juzgar por mi elección otros menús o platos de la carta, que a buen seguro estarán de cine, por ejemplo el cordero. Lo que sí puedo juzgar y causa una impresión muy desagradable es la atención que nos dispensaron, nos atendió un camarero muy acelerado, con aires de jefecillo , que no paraba de dar órdenes a sus compañeros en público, incluso en tono y con palabras despectivas, muy-muy triste. Intentando ser graciosete con nosotros pero hablando totalmente en serio y consiguiendo el efecto contrario a la gracia, nos decía en la mesa que ese día estaban dormidos en la cocina y que por eso tardaban tanto. Completó el nefasto servicio con prisas y continuos sprints algo peligrosos entre mesas de nuestro comedor, y algún que otro portazo a la puerta de la cocina, desde la que cada vez que entraba, no se oían cosas muy bonitas. Como veis, el tipo se lució, e hizo que todavía saliésemos del restaurante con peor sabor de boca de la comida, una pena para un restaurante que prometía bastante y que estoy convencido que con otra atención gana muchísimos enteros, ya que se ve que hay buena cocina con excelente producto de la zona, y un surtido de menús y carta bastante variado. En este restaurante quedó demostrado que un mal servicio arruina por completo una potencial buena comida."
