"Had to try the bouillabaisse for which Marseilles is known. Not a big fan of fish soup as I find the fish is usually overcooked and dry. Not so here. The fish was tender and cooked well and the broth was oh so flavor-filled. I was given a lesson on how to consume this wonderful dish by the host. First, a piece of toasted French bread is placed on a spoon and dipped into the broth. Then homemade mayonnaise and a type of fish paste is placed on the bread and topped with grated cheese (mozzarella?). Then the entire concoction is dipped once again in the broth and voila! Put the entire thing in your mouth and pure heaven results. The best meal I had the entire week in Europe, and that says a lot. I'm hooked and now on a mission to find the perfect bouillabaisse recipe so that I can hopefully replicate it at home."
