"nouvelle visite de Carcassonne alors évidemment nous sommes revenus dîner au Four Saint Louis, toujours aussi bon et aussi sympathique malgré une salle pleine à craquer... les moules et le cassoulet sont toujours aussi délicieux et nous avons découvert la soupe à l'oignon fameuse et qui passe très bien même au mois d'août ! Bravo, nous conseillons toujours ce restaurant."

"Para evitar los restaurantes turísticos de la cité acudimos a este restaurante por su buena puntuación. Éramos 3 y pedimos tabla de queso, tapas variadas y tabla de embutido (intentamos pedir plato del día pero no nos dejaron para compartir). La tabla de queso era la grande y no muy abundante para 3 personas. Las tapas variadas consistían en una ensalada, 4 vasitos que no supimos identificar, tres rodajas de melon y 2 lonchas de jamón serrano (del envasado). El plato de embutidos nunca llegó aunque visto el nivel de los anteriores platos ni nos molestamos en reclamarlo lo cual fue un acierto. El restaurante no es para nada recomendable. Su puntuación debe de ser consecuencia de que también tiene servicio de alojamiento."

"Best carcase cassoulet. Yet I tasted several and that of the modern tavern remained better. I highly recommend because apart from eating well you enjoy the warm welcome, it looks like we were waiting for you. during our carcase stay we ate here three times and every time it was very good. regional dishes are simple and good. Thank you and very soon!"

"Lovely little modern restaurant with a number of set menus and also a la carte options. My girlfriend and I both opted for the €16 3 course menu. I opted for the goats cheese salad, cassoulet and creme brûlée while my girlfriend had the pumpkin...soup, steak and ice cream. The goats cheese salad was quite nice and the creme brûlée was excellent. My girlfriend’s pumpkin soup did not taste of anything and the cassoulet was not to my liking but edible (my first time trying it, there was probably nothing wrong with it! , my girlfriend enjoyed her steak (like a rib eye but slightly less tasty and thinner, great value for €16 and there was a great selection of tasty ice cream. The service was good with one waiter in particular speaking excellent English and the red wine was nice. The place lacked a bit of atmosphere but the staff were welcoming and for what we paid, it was a very enjoyable experience."

"In early August, my aunt, uncle, husband and I decided to travel the Canal Du Midi by boat. On the 5th day of our trip down the canal, we moored in Carcassonne. We planned to spend two days exploring the famous city. My aunt and I happened to find Le Bis-troquet while looking for Les Helles and waiting for our husbands. By late afternoon, we were all famished and looking forward to wine and lunch. This place did not disappoint! My aunt and I enjoyed our yummy tartines (open-faced sandwiches), while the men devoured their hearty sausage special of the day. We were not rushed even though lunch service was over. We leisurely enjoyed our wine, meal, and coffee before making our way to the castle. If we ever get another opportunity to travel the Canal Du Midi, we will definitely stop here again!Bonus points for any restaurant rating: The owner is a sweet and charming man who warmly greeted us several times throughout our meal. Two thumbs up!"
