"staying for 2 nights at the hotel of the castle, we had booked to dine there the first evening and as we liked it, we decided to eat there a second time. the menu at 34 euros is unique and changes every night. In both cases, it was a very fresh, refined cuisine, highlighting the local products. the slow-cooked roast lamb was particularly tasteful. the portions are not very abundant but we didn't get out of tables by ending. the wine menu offers a beautiful selection of minervois of the region ( delicious white wine villa lucia ). Service is very careful. Note that the service is fairly slow but on holiday it is absolutely not embarrassing!"

Beautiful hotel restored from a very character-filled old chateau to a very high spec.

The highlight of our trip to France. The food was so good we are still drooling at the memory. The service was professional, the wine list explained, and the presentation of each plate, artistic.

No choice at dinner, but this is not a drawback as each meal I have had here has been excellent. The food combines simplicity, elegance and flavour in a way that is not matched by any other restaurant I have found in many visits to this area of France.

We stayed at the hotel and we opened the kitchen just for us 4, we had the whole beautiful dining room for ourselves, it is the wife of the house who cooks the food. We served a three-course menu that was fantastic, local produce. good wines from the district. View menu

Siran is a delightful small town of 700 people-- surrounded by vineyards and wine makers! This hotel fits in perfectly with its surroundings. It is classy [understated], comfortable with bilingual service (English & French) and its restaurant, while offering limited choice excels at what is presented for all meals! Definitely worthy of its 4 star rating!!

And we went there one night out of curiosity. We took a cocktail at the edge of a very pleasant basin. Then came the long-awaited meal! dishes are served at the same time for each table and what delight! c is an explosion of flavors for taste buds. We really enjoyed the atmosphere, the quality of the dishes but also the sympathy and professionalism of the boss and the waitress.

We booked in here last minute for two days in mid-summer and got a large room. The reception was excellent, the room was excellent and we decided to eat there too. The menu was fixed, three-course but they had flexibility for my gluten and lactose-free wife. Superb choice of local wines and even a few local spirits (Pastis from Carcassonne recommended). I would definitely stay here again, very peaceful. View menu

We stayed in the Chateau as a Valentine's Day treat. The hotel is very nice, but the meal was a big disappointment. The service started only at 21:00! No choice, set menu = take it or leave it. Only 3 courses and not well done. The soupe was served nearly cold. The main course a bit of Pintade was served on a risotto, that was so salty that it killed any other taste that there might have been. Dessert was a little apple tart, just as you get it in any bakery. The local wine was good but overprized.
