"I could write a book about why Le Taillevent is one of the best restaurants in the world. Literally everything was done to make for an evening of exceptional culinary wonder. First the service. From the greeting at the door to being ushered into the quiet, elegant dining room to being seated side by side at lovely table, it became clear that this restaurant communicates an attention to detail that was repeated in every interaction throughout the 3 hour meal. All staff showed an attitude of respect, attentiveness, and graciousness without an any trace of stuffiness or hauteur. Their goal appeared to make us feel welcome and to maximally enjoy the incredible meal they served so beautifully. Now the exquisite meal. We chose the 7 course Quintessence menu and we were delighted beyond our wildest imagination. Before the courses began we were treated to airy cheese puffs and an amuse bouche of piping hot langoustine in a lovely sauce. The sommelier recommended a spectacular Burgundy and skillfully helped us select one in our price range without ever asking what it was. First course was an exceptionally delicate watercress mouse with equally delicate caviar that was as visually beautiful as it was delicious. Next came their famous lobster 'sausage,' a mousse like log of pure lobster flavor in a lobster sauce garnished with a piece of fresh lobster (with its own sauce) and some marinated, piquant root vegetable to play off the richness of the rest of the dish. Third was an incredible spelt risotto with wild mushrooms that burst with different flavors and textures. Fourth, a perfectly cooked duck breast with beautiful warmed black cherries provided the essence of duck flavor. The fifth course was cheese with a selection from a huge cheese board of over 60 choices. He quickly determined what we liked and then paired it with a complementary. The last two courses were desserts- a panna cotta with small, brilliantly flavored strawberries topped with basil ice cream. The last course (or so we thought) was their signature Caribbean chocolate dessert, a chocolate sculpture incorporating milk and dark chocolate. As we internally prepared to leave, we were then presented with a tray of exquisite small pastries and a glass of terrific Armagnac (on the house and the bottle left on the table if we wanted more), the surprise ending to a truly rare dining evening. There is actually so much more I could say, but I hopefully conveyed a bit of what sets Le Taillevent apart from other great restaurants. Together the bill came to about 560 euros total for two. I went thinking that this was tres cher, but left feeling quite happy and naturally left a good sized tip."
