"We live in Hyères and I love this restaurant. I often go back there, especially for mussels. (Alas this year they were not great from everywhere. If you go take the “Bouchot”, they are better). Quality Price: it is reasonable if we consider the rents and expenses that have exploded. What I like: When I go to a restaurant I always ask the staff in catimini. “Are you paid correctly, are you paid for all your hours worked?” I also want to know what's going on with tips. If I can talk to the boss, I do it too. I ask him how it goes with the employees, whether he has difficulty recruiting or fidelizing them. I look at if there are always new faces and expression on these faces. I look at how the team is organized. The answer to my questions here is very satisfied for everything. At least I know I don't eat on the back of the staff. For me it counts a lot! The boss pays his employees, his speech to them is very respectful. It can be observed that he is very hard-working and knows his profession well. He jokes nicely with his employees and we felt that there is comradeship and trust between them. His team is working, organized and smiling. We feel that they form a team. In such an atmosphere one feels well and one knows that one will be well received. We have empathy when it is the “season” (touristic) because we know how difficult it is. Apart from the very good miam-miam I always go back there for this reason: we eat very well and I digest better."
