"Two friends and I walked the twelve kilometers from the train station at Mennecy through a natural preserve incorporating artificial lakes created when sand and gravel quarries were abandoned and filled with water from the Essonne River. Le Chalet des Etangs is located on a narrow spit of land between two lakes. The interior of the restaurant is spacious enough to accommodate large groups and a shady outdoor dining area offers a pleasant environment during good weather. We each chose a two-course lunch—main course plus dessert--from the three items on the slateboard: boulettes de bœuf provençale, saucisse de Toulouse chaud and sot-l’y-laisse de dinde with pommes sautées. The first item is the southern France version of spaghetti and meatballs. Saucisse de Toulouse is a mild-flavored pork sausage served warm. As for sot-l’y-laisse de dinde, the English translation is Turkey Oysters, small, round pieces of dark meat on the back of the bird near the thigh. [See photograph. According to the Wikipedia, “Some regard the ‘oyster meat’ to be the most flavorful and tender part of the bird.” Translated into English, the French phrase means “fools leave it,” because inexperienced carvers often accidently left the pieces on the cutting board. The Turkey Oysters were delicious. For dessert, we had crème brulée sprinkled with crushed spekuloos, cinnamon flavored shortbread cookies, and panna cotta with strawberry coulis. I can’t guarantee that Turkey Oysters will always be on the menu at Le Chalet des Etangs, but I am confident that what will be on the bill of fare will be delicious. Service was prompt and courteous. With one bottle of Cotes du Rhone and one of San Pellegrino sparkling water, the check came to $75.00 for the three of us. It is about a thirty-minute walk from the restaurant to the train station of Ballancourt."
