"Premitting that I am not a generous person of compliments but tonight I was particularly impressed. Typical and reserved environment (recognize to book because the places are limited that fits well with the modern and very elegant mise en place. The musical selection was also appreciated. The staff is very friendly and polite both in order and in the delivery of the dishes. What struck me was the kitchen. All dishes have a presentation that shaves the art and a wide use of creams and emulsions for the details of the dish. The ricotta tortelli had a delicate but well defined flavor that finely enhances the taste of the burrata, the basil foam was energetic, as a hint of flavor before the caress of the burrata. The tomato emulsion is an excellent example of extraction and concentration of the essence of the tomato flavor. Also all products are made or at the moment or in the day. The cheek (their specialty is perfectly glazed and very tender consistency. The salmon trout very tasty and, first time in my experience, completely free of lysque, symptom of minuziosa cleaning. The juicy and tasty meat remains soft after cooking. Finally the ice cream made at the moment melts in the mouth only taste. In conclusion, I think this place has two equally passions: emulsion and good food."
