The first gang was called “Carpaccio”: On beef were black roots, rocket, a croquette stem and a fine sauce cream. I tasted the black root with the jus very well. A Chardonnay from Germany was given this (he matched the court, but did not make a lasting impression on me. The fillet was fried on the skin (cracked skin tasty, fish meat finely cooked. The ingredients harmonized. The wine was excellent: Sancerre (Loire area, Sauvignon Blanc grape variety.
