"Our summer holiday was not a good star this year. A day before our departure forced an unplanned stay in the hospital emergency room with subsequent All Inclusive stay in the affiliated office for a short-term re-sale. Two nights Munich and the first three nights in Oberstdorf were killed. And with this, unfortunately, the consequent reservations in Michelin's houses also stared. Finally we were glad to arrive on the trip, but the first station in the Allgäu had to organize spontaneously. A reservation in the second star restaurant in Oberstdorf was unfortunately no longer possible in the short term, but in the Romantik Hotel Das Freiberg, which is responsible for a variety of gastronomy in the village, there is also the bib Gourmand-winning fetzwerk. In an original ambience, an unconventional concept is realized here for Allgäuer conditions. Originally composed bistro dishes are served in wake-up glasses, each of which is either regional, Mediterranean or Asian. In each category there is also a vegetarian, meat or fish variant. The standards are supplemented by some daily recommendations. In addition to a small but solid selection of wines, the “Fetzwerk” also focuses on beer culture and offers many suitable craft beers, preferably from the region. Craft beer We try over the map and through all categories and start from the headline “home” on one side with salmon trout and poulard chest. The fish itself is discreetly marinated and accompanied by warm beans of all kinds that receive a fruity effect of apricots. On the other hand, the poularde with carrots, sugar chodes and fine wheat is on the cozy side. The finely cut vegetables are still nicely crisp and both dishes are together that creams offer a connecting element. You must not be tempted to believe it's a ****. There are already quite grown glasses with correct capacity, so three glasses per person are absolutely sufficient. Therefore, the desserts now pose a certain challenge for appetite. From the recommended day there is a Crème brûlée from the Tonka bean and from the two standard desserts from the map a Panna Cotta with a compote of exotic fruits. But dessert does not mean to beat the heart without reason. A vanilla parfait, surrounded by chocolate candies and partly covered with chocolate in heart shape, crowns the glass. However, the parfait is still frozen so that it takes some time until it can be eaten without accident and without organizing a wild massacre in the glass. Crème Brûlée Heart and Heart Exotic Fruits, Panna Cotta was Tobias Eisele, who is also responsible for the Star Restaurant "Maximilian's", sends in glasses to the "Fetzwerk" simply charm. The dishes are designed for uncomplicated spooning and if you work from top to bottom, you can best capture the entire chord of each glass. This is all juicy and harmoniously conceived. That there was one or the other, such as the cheese crocket, is the too hard parfait or the slightly dry duck, which was not completely perfect, no leg break. For this, the refreshing concept makes too much fun, as the attentive and simple service also has its good share and remains inexpensive in a very acceptable framework. The glasses are fair and reasonable with a cut of 8 euros. With his criticism, Mr. Duresser has made us curious about the work and of course I have read the very different opinions about it here. The concept was already sympathetic from the description. And I am convinced that if you simply let yourself in, you can see very quickly that here, although in a somewhat uninhabited form, very good quality is offered and the whole is also with fun factor! In any case, we liked it and who in Allgäu looking for an alternative to pig roasts and dumplings, there is a restaurant that can work in the big city."
